Troubleshooting form emails?

Is there a good "go-to" guide for troubleshooting the RocketTheme forms, and what MX record the hosting account needs to be pointing to? It seems like I'm always having to go in and try a number of different things, hoping that one of the attempted fixes sticks.
The most OFTEN problem I come across is when I "send a copy to yourself", the copy will go to my inbox but the form response won't land in the intended inbox.
Is there a standard MX or schema of settings I should always be using? (GoDaddy hosting, always use PHP Mailer in the Dashboard)

- Well, that depends do you host your email on your server, or you use Google Apps maybe or Microsoft Office 365? for email?

- Never hosted myself on a server. Always a 3rd party (365, Yahoo, Gmail, etc.)
