How do I change Categories and Tags?

I'm putting together a Blog on my site and would like the posts to show ALL the categories that they are in--Not just the one associated with the page it's on. But I don't see a way to add them in the theme options.
I'd also like to add the tags in the same manner as the Author and title, but when click to "Add tags" it shows them big and bulky on the right of the post and decreases the width of the post. Any way to move them?

as for the tags you will also need to edit the php files ... - Available for CUSTOM WORK with Joomla, WordPress and Grav Templates and Gantry Framework!
