I believe it is used to protect your logo image. You do not want to make it easy for somebody to "steal it". Well that is what I thought.
Saying that, it seems irrelevant with Firebug.

- I use this technique because I like to be able to swap out the logo image via css, so i set the img bg via css, and put a blank.png over the top because an img tag requires a src.

I actually wondered the same thing.
Si in this way you edit the css file and not the template file to change the logo image name? -
