My fear is that these sessions will be held concurrently and I won't be able to attend every one that I'd want to attend. I would seriously try to attend the conference.
In addition to the technology-based workshops, I'd like to have a chance to hear from other web companies about how well their business is (or is not) working for them. To hear how their businesses are leveraging Joomla, RT, and other open source technologies. Are they winning larger projects, and how are they competing against the do-it-yourself options? Perhaps a case study or two about how someone used RT in a large project. I'm as interested in the business side as I am in the technology.
I believe you should take into consideration the success of learning via web such as lynda.com, think vitamin etc. I would definitely pay and attend an online conference/tutorial session because it allows me to learn in my own pace and in my own time and I can reuse the documentation and see parts of it anytime.
I think that not only the Rockettheme community but the entire Joomla! community would benefit from the idea you suggested given the fact that topics such as "Design-to-Template", "MooTools Development" or "Cross-Browser Testing and Gotchas" are poorly documented. A Gantry Framework Tutorial would be great, both for Joomla and Wordpress - I believe that Gantry for Wordpress doesn't yet have the popularity it deserves given the fact that is far superior to any product in its category.
